N-乙酰神經氨酸醛縮酶(EC 4.1.3.3)也稱為唾液酸醛縮酶。游離的N-乙酰神經氨酸在N-乙酰神經氨酸醛縮酶的作用下裂解產生丙酮酸。此酶可與神經氨酸酶、乳酸脫氫酶、丙酮酸氧化酶一起檢測唾液酸的含量。
